Jungjak (증작/中雀/)
Although less subtle than the Sejak, Jungjak is certainly complex in flavor. Lively and flavorful, the brew is sweet and grainy, with a smooth finish. Jungjak (증작/中雀/) is a grade of Korean green tea. Jungjak is the third pluck of the harvesting season. The harvesting period for jungjak begins on May 20th or soman (소만/小滿), following the traditional East Asian seasonal cycle. Jungjak is called "medium sparrow" or "medium sparrow's beak" referring to the size of the leaves.
