Yellow Tea, considered one of the more uncommon categories of tea, is very similar in character to green tea but lacks the archetypal grassy notes and astringency often found in Greens. What makes yellow tea unique is the time-expensive and labor-intensive step referred to as "sealing" that is required for its production. It all starts the harvesting of these tender, slim buds in early spring; they are immediately dried via direct sunlight, or through a traditional pan-firing process. Then, the leaves are delicately wrapped in a damp cloth and steamed to induce a very mild oxidation process, which physically yellows the tea and mellows its flavor. This tea specifically comes from the Huoshan county in Anhui Province of China, where the climate yields a quality, high grade tea - the perfect starting point for the perfect yellow tea.

Tea Tips

Brew with a water temperature of 165-175°F (80°C) for 1-3 minutes.

Water that is too hot will burn the flavor of this elegant tea, so be sure to use water between 165 and 175 degrees Fahrenheit for best results. Try brewing anywhere from one to three minutes; one minute for a delicate taste, or two to three minutes for a stronger flavor.
